Fresh Pesto knocks the socks off shop bought Pesto!
Ingredients:
80g Basil Leaves
50g Pine Nuts
50g Pecorino Cheese
100ml Extra Virgin Olive Oil (Good Quality!!!!)
1 Medium Garlic Clove (Not too big not too small)
Method:
Toast Pine nuts
Grate Pecorino
Cut stems from Basil to leave only the leaves
Either finely chop Garlic or use Garlic crusher
Blend in stages the Basil leaves, Finely grated Pecorino, Extra virgin olive oil, Toasted Pine nuts & Garlic (Tip add garlic bit by bit so you don't over power with Garlic) together until desired consistency is reached
More olive oil can be added if you want your pesto less thick it's up to you
